Keto Vanilla Donuts
Ingredients:
– 1 1/3 cup almond
– 1/4 cup swerve
– 1tsp baking powder
– 1/2 tbsp powdered gelatin
– 2 eggs
– 3 tbsp butter (melted and cooled)
– 1tsp vanilla
Instructions
– Preheat oven to 350 degrees.
– Combine dry ingredients in a bowl and mix thoroughly.
– Add eggs, vanilla and melted butter (that has cooled) and mix gently by hand just until combined.
– Use a spatula to fill the cavities of a donut pan about halfway full.
– Bake at 350 for about 15 minutes.
Toasted Coconut Glaze:
Ingredients:
– 4 ounces of cream cheese (room temperature)
– 1/2 cup swerve
– 1 teaspoon vanilla extract
– 3-4 tablespoons of unsweetened almond milk
Toasted Coconut:
Toast coconut in the 350 degree oven for 5 minutes until it is golden brown.
I like to just spread the frosting on the donut and sprinkle each with the pink toasted coconut. It hardens as it cools so add your coconut before it sets.
