I am a lover of Avocado toast and like to try to mix things up or try new things all the time.
Ingredients For Tropical Avocado Toast
Tropical Salsa for Top Ingredients:
- 1/2 cup red peppers diced
- ½ cup of cilantro
- 1 cup mango Ripened chopped small
- 1 cup pineapple chopped small
- Lime juice 2 teaspoons
Avocado Mash Ingredients:
- 2-3 ripe avocados mashed
- Squeeze of lime and lemon juice (to your liking)
- Everything is a bagel seasoning (to your liking)
- Red pepper flakes To your liking (to your liking)
- Himalayan Salt and pepper (to your liking)
Toast /Bread:
- Make some keto bread – One of my favorite recipes is here: (https://www.sweetashoney.co/keto-almond-flour-bread/) or use gluten free bread from the store. (It’s not Keto but I do eat it some days) and my family eats it!
Balsamic Glaze – To drizzle lightly over the bread after.
Instructions:
Chop all the ingredients and mix together except the mango. Then add your mangos, be careful not to overmix because the mango can get mushy. Then squeeze a little lime juice over the top and lightly mix. Store in a container until use.
Use a few ripened avocados peel, cut and drop into bowl – the number used depends on how many slices of toast you are making. Add juice salt and pepper to your liking. I like to add in some red pepper flakes and everything is a bagel seasoning into mine as well for flavor. Once mixed spread on the toast and add the tropical mix on top of the avocado.
Then drizzle a little Balsamic Glaze over the bread.
NOTE: You can also use the Tropical Mix over greens, chicken, salmon etc. (I would chop some chunks of avocado and mix with it if doing that). Get creative!
IS LOW CARB MANGO SALSA KETO?
You may ask is Mango and Pineapple are approved on a low carb / keto diet?
Mangos and Pineapple are high in carbs, so you don’t want to go overboard here, but you can eat them on a Low Carb / Keto diet in small amounts, especially in salsa with other ingredients.
As a side note, mangos are very healthy for us. They are predominant in many vitamins and antioxidants. Plus they aid in digestion because of the high fiber in them. But again on the Low Carb / Keto diet do not go overboard.
